Crème de Tête is the name given to the wine produced from the first sorting of the grape harvest in the Sauternes region. The grapes are very concentrated, almost candied under the action of the botrytis or the tradive harvest.
This top cream from Domaine Rousset Peyraguey is aged for 5 years in barrels. This prolonged ageing gives it a rare complexity with notes of quince and candied lemon. The fatness is balanced by a touch of acidity and a remarkable finesse.

The Rousset-Peyraguey estate is an estate of just over 10 hectares whose vines are cultivated biodynamically. The vines are on average 50 years old or more.
Alain Dejean, at the head of the estate, is a little bit different in the Sauternes region: biodynamic viticulture, non-interventionist vinification, very long maturation, very little sulfur, etc.
