Just graduated from a BTS in viticulture and oenology, Thomas Picot joined the family estate in Courgis (Chablis appellation) in 2004.
Son and grandson of a winegrower, he inherited the passion of the profession at a very young age. As soon as he arrived, he managed his vines using organic and biodynamic methods, a practice that was not very widespread in Burgundy at the time.
The vineyard gradually grew to become "Pattes Loup" and Thomas gained the status of "rising star" of the appellation.
He advocates a meticulous work of the soils, refuses the harvesting machine and limits the yields.
The wines share a sparkle, a class and offer bluffing balances with low levels of sulfur.
