Domaine De Chassorney, Savigny-les-Beaune "Les Gollardes" 2018 - 0,75L

The Gollardes parcel is composed of a clay-limestone soil. It is exposed to the south.

The pinot noir grapes are harvested manually. They are then fermented in whole bunches with the help of indigenous yeasts. The wine is then aged for several months in 14 hectoliter ovoid vats.

This cuvée reveals nice notes of wild fruits (strawberries, raspberries) and spices. In the mouth, a lot of finesse while keeping greediness. A beautiful expression of the terroir!

Frédéric Cossard was originally a Burgundy wine broker. In 1996, he started to work as a winegrower, cultivating a few acres of vines in Saint-Romain, Auxey-Duresses and Savigny-lès-Beaune. This is how the Domaine de Chassorney was born.

This did not prevent Frédéric and his wife Laure from continuing their trading activity via the SARL Frédéric Cossard, which supplies itself with grapes from renowned appellations and crus (Meursault, Puligny and Chassagne-Montrachet, Nuits-Saint-Georges, Chambolle-Musigny, Morey-Saint-Denis, Vosne-Romanée, Beaune, etc.).

Today, the Domaine de Chassorney has 10 hectares cultivated with the greatest respect for nature, without chemical fertilizers or weed killers. In the cellars, human intervention is reduced so that the wine can express itself fully.

The result is wines marked by elegance and purity.
