Champagne Ruppert-Leroy, Brut Nature "Papillon" 2019 - 0,75L
The 2019 Papillon Cuvée is a Blanc de Noirs from the "La Fosse" plot, composed of clay-limestone soils with a majority of red clay.
The wine is made without added sulfites. It is then aged on lees in barrels and demi-muids for 9 months and then refined in bottle for 18 to 20 months on laths.
Papillon 2019 reveals a pretty nose of citrus fruits and apple and pear compote. The frank and lively but still greedy attack stretches on fine creamy bubbles. Mineral finish.
The Ruppert-Leroy Champagne estate's vineyard covers 4 hectares in Essoyes, in the Aube region, on the Côte des Bar.
The domain obtains the organic farming certification in 2013 and then the Demeter (biodynamic) certification the following year. Respect for the soil and biodiversity are at the forefront of the viticulture: grassing of the rows, spreading of compost, tea, dung, etc.
A cuvée per vintage is elaborated in order to enhance the expression of the different terroirs. In the cellars, too, the work is meticulous and human intervention is limited: work by gravity, vinification without sulites, indigenous yeasts, no fining or filtration, etc.
Ruppert-Leroy champagnes are precise and out of the ordinary.
