Vouette and Sorbée are the 2 parcels of Hélène and Bertand Gautherot in Bruxière sur Arce, in the Aube region. The vines are 35 years old on average and cover 5 hectares. They are certified Organic Agriculture and Demeter since 1998.
After the manual harvest, the wines are fermented with indigenous yeasts in 400 liter barrels, rooms or amphoras. They are neither filtered, nor fined, nor dosed in order to respect the purest expression of the terroir.
Not surprisingly, the champagnes are magnificent: fine, elegant and taut. A confidential production for amateurs of winegrowers' champagnes.
