Domaine Saladin, Côtes Du Rhône "Paul" 2019 - 0,75L
Cuvée Paul is a blend of 90% Grenache noir and 10% Clairette. The vines are cultivated in organic agriculture and are certified Ecocert.
The grapes are harvested manually and carefully sorted. They then undergo a semi-carbonic maceration which allows to keep all the freshness of the fruits. Aged for 9 months in vats.
Nice notes of black fruits (blackcurrant, blueberry), spices (cinnamon) and leather. The attack is full with a nice grain of silky tannins with notes of cherry and vanilla. The finish is balanced, ending with a very fresh expression.
Natural wine with a minimal dose of sulfur.
According to the archives, the Saladin family already bought vines in 1422 in Saint Marcel d'Ardèche.
21 generations of winegrowers have followed in their wake. Elisabeth and Marie-Laurence, the daughters of Annick and Louis Saladin have been running the estate and its 18 hectares since 2003. They share the vineyards and the cellars and complement each other perfectly.
13 grape varieties are grown on the estate: grenache (black, white and pink), cinsault, carignan, mourvèdre, syrah, viognier, clairette rose, clairette blanche, bourbenlec, marsanne and roussanne.
In the cellars, the work by gravity is preferred because of the cellar which is buried.
A small amount of sulfur is added to the vat and at bottling.
The wines are a perfect representation of the terroir: fresh and fruity with great elegance.
