Guillaume Gilles, Cornas 2017 - 0,75L
This Cornas is made from 2 parcels of the Chaillots terroir: "Les Terrasses", on the upper part of the Chaillots, with decomposed granite soils, facing south and southeast, and "Les Grands Murs", in the middle of the Chaillots, with clay-limestone soils on granite, facing south. They are vinified and matured separately.
The wine is silky and complex in the mouth, a great art!
Made for ageing, it can be aged in the cellar for 10 to 15 years.
Gillaume Gilles has been working in Cornas since 2002, on the Chaillots terroir, known for its granitic soils. A recognized winemaker in the Rhone Valley, he was trained by the best: Jean-Louis Chave (Hermitage) and Robert Michel (Cornas).
He inherited 0.5 hectares of vines from his grandfather, which he cultivates in a responsible manner: ploughing the soil with a caterpillar, working the vines by hand, etc. The slopes are steep and the work is difficult.
In the winery, the wines are vinified and aged by the micro plot. The whole bunches are fermented in concrete tanks. The wines are then aged for 18 months in oak barrels and 600-liter demi-muids. They are neither fined nor filtered before bottling.
The wines of Guillaume Gilles are deep and concentrated while offering great finesse.
