The grapes come from Chenin vines planted on high altitude soils. The alcoholic fermentation starts under the action of indigenous yeasts. The wine is then matured in 500-litre barrels, in tuns and in concrete vats. 

Great aromatic richness characteristic of Chenin. The altitude soils guarantee a beautiful freshness and elegance to this white wine with an evocative name.

Carine and Stéphane Sérol are settled in Renaison, in the Côte Roannaise, in the Loire. They took over the family estate at the end of the 90's and replanted everything to put back in vineyards the most beautiful hillsides on the granitic terroirs of altitude, located between 400 and 500 meters, on the eastern foothills of the Massif Central. 

Today, the Sérol estate has 32 hectares of Gamay, 2 hectares of Viognier and 2 hectares of Chenin.

The vineyard is cutlivé in biodynamie and the wines of the domain are certified organic agriculture.
